Our olives are picked by hand, and all of our olive groves are organic. The fruits are harvested and processed one variety at a time. The start of the harvest is determined by our team of experts for each individual variety, depending on the year’s weather conditions and the characteristics we want to achieve for the oil which. Processing is carried out on the same day, mechanically, with a cold press. The oil mill works in two phases. The oils we obtain are then processed into coupages and the oils are single varietals. The oil is kept in a cellar in containers in an inert atmosphere, at a temperature of 14° to 16° C.
