The harvest is now complete, usually earlier than in other regions of Dalmatia. The varieties are harvested separately and processed the same day. After this, the oils are left to settle naturally for about a month. The oil is stored in a separate room that is kept at the perfect temperature between 14° and 16° C. with an inert atmosphere. In cooperation with the Institute for Adriatic Cultures and Karst Melioration and its expert, Mirella Žanetić, PhD, we process our oils through coupage into the varieties MILD and INTENSE. Since 2016, we have also been producing limited quantities of single-variety oil, depending on the olive variety that has achieved the best results that year.
