ROSE BRUT

Sparkling wine comes from our most renowned local red grape variety, Plavac Mali. The production of this sparkling wine began as a challenge, given that our vineyards are located in the warm Dalmatian region. Aware that, despite the climate, this variety naturally retains high acidity, we decided to take this step and today produce an interesting and unique brut sparkling wine using the traditional method.

VITICULTURE:
The grapes for this wine come from the most famous indigenous red variety, Plavac Mali, grown in our own organic vineyards in the Komarna wine region. The vineyards are situated on southern slopes with inclines of up to 30%, at elevations ranging from 50 to 250 meters above sea level. The soil is rocky and consists mainly of limestone with only a small amount of topsoil. Yields per hectare are very low, ranging from 18 to 27 HL, resulting in concentrated fruit quality and freshness. Irrigation is used only in cases of extreme drought.


WINEMAKING AND AGEING:

The winemaking and vinification processes begin with grape selection after hand harvesting in our winery. The grapes are carefully selected under the watchful eye of the winery owner to ensure that only the best fruit continues into production. The wine undergoes alcoholic fermentation in tanks under controlled conditions, while the secondary fermentation takes place in the bottle (classic or traditional method). After the second fermentation in the bottle, the wine ages on the lees for 18 to 24 months.


TASTING NOTES:

This wine opens with aromas of candied strawberries, brioche, and delicate floral notes. On the palate, it reveals flavours of pink grapefruit, rhubarb, blood orange, and tart cranberries, supported by elegant bubbles and a lively, refreshing finish.


FOOD PAIRING:

This sparkling wine pairs perfectly with bites of artichokes and aged cheese, fresh seafood, oysters, or sushi.
