The fruits are harvested and processed one variety at a time.<br \/>\nProcessing is carried out on the same day, mechanically, with a cold press. The oil mill works in two phases. The oils we obtain are then processed into coupages and the oils are single varietals.<br \/>\nAfter this, the oils are left to settle naturally for about a month.
