Our olives are picked by hand, and all of our olive groves are organic. The fruits are harvested and processed one variety at a time.
Processing is carried out on the same day, mechanically, with a cold press. The oil mill works in two phases. The oils we obtain are then processed into coupages and the oils are single varietals.
After this, the oils are left to settle naturally for about a month. The oil is stored in a separate room that is kept at the perfect temperature between 14° and 16° C. with an inert atmosphere.
